Tofu is a very versatile and adaptable food. It often takes on the flavors of other ingredients, and it works in many different kinds of cooking. This recipe calls for frying tofu while adding pungent spices and sesame seeds for an Asian-inspired appetizer. Try dipping in spicy Thai sauce or cool and use to top salads.

1. Cut 1-pound block of tofu into 1/2- to 1-inch cubes.
2. Preheat oil in skillet and add tofu. Cook on high heat, stirring to brown. Turn down to medium heat and continue to fry until tofu is brown and crispy on all sides.
3. Add spices and sesame and stir to coat. Cook on high for 2 to 3 minutes more to toast the sesame. Add the tamari. (It will sizzle.)
3. Continue frying until moisture is cooked off, about 2 to 3 minutes more.Use tofu to top rice or other grains, or add to stir-fried vegetables.

Also good as an appetizer dipped in spicy Thai sauce, or cooled and used to top salads.
